Here's a pic of a wing weighted on the riser.
I do the center first and then the LE area.
I've got buckshot in those butter containers.
Once that glue dries, that washout "ain't moving".

Noah has a good point for doing the bottom first for setting up servos, etc.
When I do the top first, I have to put tick marks along the sides for ribs, etc and take measurements of servo locations...

I build just about all Ziroli stuff and he puts in risers under the wing to get washout.
I find it easiest to sheet the top first to insure the washout stays in the wing.

I'm assuming you are using plastruct sheets, they have their own glue for it (see below web site).
Plastruct sheeting is used a lot in model railroading and I just use lacquer reducer to adhere two...
